2 cups Chickpea flour
1 whole Organic egg
60 ml Almond milk
1 tbsp Parsley, chopped
1 tsp Coconut oil (to fry)
½ tsp Baking soda
Pinch Sea salt
Twist of black pepper
2 Streaks Organic Turkey bacon
2 tsp Maple Syrup

Whisk all ingredients together in a large bowl and sit it in the fridge for 15-20 minutes.

Preheat the grill and place the bacon onto a foil lined grill pan. Grill the bacon until nice and crispy.

While the bacon is cooking, heat up a pan with some coconut oil. Allow two large tablespoons of pancake mixture per pancake. Fry on one side for around one minute or until golden brown, then turn and fry on the other side.

Serve 2 pancakes per portion with two slices of bacon and a drizzle of maple syrup.
