4 Slices of Watermelon
1/2 Red onion
1 tbsp Picked mint
2 tbsp Crumbled feta
1 tsp Sumac
Lime
Extra virgin olive oil
Sea salt and pepper

Heat a grill pan or light a BBQ for this recipe.

Slice watermelon into manageable portions. Drizzle with olive oil. When pan or bbq is up to a high heat gently place on the watermelon. Cook for a minute on each side, this gives the watermelon a lovely smokey flavour and brings out the sweetness.

While the watermelon is cooking, slice red onions as thinly as you can, then run them under a cold tap to take away some of the onion strength. Cut the lime in half and place on the hot pan or bbq until slightly blackened, this will bring out the juices.

Place the watermelon on a sharing plate, then sprinkle over feta, mint and more olive oil. Next a squeeze of lime and a pinch of sumac.
This recipe works just as well with watermelon uncooked too! (Nice and cold from the fridge on a hot day!)
