75g Gluten free rolled organic porridge oats
2 Fresh lemongrass
250ml Coconut milk
1 tbsp Chia seeds
1 tbsp Pumpkin seeds
1 tsp Vanilla extract
1/2 Sliced banana, to serve

Smash the lemongrass with the back of your knife, place into a blender with the coconut milk. Blend the milk for one minute and let it sit for another five minutes. When it is infused with the lemongrass, strain the milk through a sieve and discard the lemongrass.

Mix the oats, lemongrass infused coconut milk, pumpkin seeds and chia seeds together in a bowl and leave in the fridge overnight to soak

Next morning place into a bowl sprinkle with a few coconut chips and the banana slices.
